Pastelon Boricua
I am a proud child of Puerto Rico (don't get me started on Puerto Rican history), and this dish is as quintessentially Puerto Rican as it gets. Think a Caribbean flavored lasagna with the noodles replaced by sweet plantain. Picadillo takes the place of Italian sausage. Rich, delicious, sweet and savory do a merengue on your tonge.
Fun fact: My grandmother falsely claimed she invented this dish!
